Unbaked Beans

Healthy unbaked beans with fresh greens and bread.

I love baked beans, but don’t love all the added extras they put in them! So I have made my own! They are super quick to make and taste delicious too!  This includes mushrooms but you could easily leave them out! Makes a complete meal served with crunchy sourdough or a side to go with your bacon and eggs.

Unbaked beans make for a great quick and easy meal for a scrumptious breakfast meal or afternoon snack, it is super healthy and frugal too!

Ingredients

  • 2 Cans White Beans, rinsed

  • 1 Can Crushed Tomatoes

  • 1 Red onion, finely diced

  • 250 gram Spinach, chopped

  • 1 tbsp Butter

  • 1 tbsp Worcestershire sauce

  • 10 Button Mushrooms, sliced

  • 2 Sprigs Rosemary

  • 2 tbsp Oregano and Thyme, chopped

Directions

  • Heat the pan on medium heat and add the butter to melt.
  • Add the onions, mushrooms and herbs and stir until they are cooked and soft.
  • Add the beans, tomatoes, Worcestershire sauce and spinach on a medium heat until they are warmed through and the spinach has wilted.
  • Add salt and pepper to taste and serve with Crunch Sourdough
