You’ve worked your butt off all day, you’re tired, the kids are tired, your partner is tired, even the dog is tired and you’ve got to cook dinner.
You’ve checked the freezer for easy meals – nothing.. Urrgghhh. That means you actually have to cook! Then again, that doesn’t necessarily mean slaving in your kitchen for hours. Here are some simple meals for dinner in 25 minutes or less. Quick and easy recipes with no fancy ingredients are perfect for when you don’t feel like cooking!

1. – Sausage and Potato Sheet Pan Tray Bake
I love this recipe – just shove it all on a tray – add a bit of seasoning and in 25 minutes – you have a full, delicious meal. So easy!
2. Vegetable Fritters
They are easy, good for you and the kids love them. Takes about 15 minutes to put together, and 5 minutes to cook. Best of all – serve on their own!

3. Bangers & Mash
This is actually one of my favourite dinner recipes. Cook the sausages in a moderate oven for 20 minutes until cooked (or you can grill or BBQ them!) Serve with mashed potato and gravy. Will take about 20 minutes all up if you put the potatoes on at the same time you put the sausages in the oven! Throw some onion rings in the gravy if you have the time for an even more delicious meal!

4. Fried Rice
Got some leftover meat in the fridge? Cut it up finely, throw it in a fry pan with some onion and a hand full of frozen veggies, add some cooked rice (takes 10 minutes in the microwave) – add some soy sauce and your done! All up – 15 minutes!

5. Home Made Pizza
Got some pitta bread or some pre-made pizza dough in the freezer? Then you have a meal! If you have no pizza sauce, just use Tomato or BBQ sauce as a base, throw any leftover meats, capsicum, onion, cheese – whatever you have. Place under the grill for about 7 minutes – and you’re done!!

6. Beef Chow Mein
Got some mince – then try this cheaters recipe for dinner (click on the link!). Provided you have all the ingredients in the house – it will honestly take less than 10 minutes to get the meal on the table. Just use the vegies you have on hand – it’s especially good with cabbage!

I love making pita bread pizza and pita bread wraps with leftover meats and salad if i dont have much meat i make a vagie mix and put a bit in there like spinach, mushroom, boch choy, grated carrot, beans or lentils all in a frying pan with a bit of tomato paste or crushed tomatos really easy and uses all left over then i just put it in wraps and toast them for my lil one with cheese and all that. I use tortilla wraps though not pitta bread as it is about a third of the price and almost identical stuff.
I love making a simple parma when I’m feeling lazy. I use a pre-crumbed schnitzel (cheap from the deli counter at woolies) and cook it in a pan on the stove – takes only a couple of minutes. Then I coat the cooked schnitzel in tomato pasta sauce, and give it a generous sprinkle of grated tasty cheese. Just bang it in a hot oven for a few minutes until the cheese is melted and golden. Serve with a salad or some easy steamed vegies and perhaps some oven-baked chips or potatoes.

Really Easy Pasta: Fry up some sliced Chorizo and mushrooms with a can of crushed tomatoes and stir through a pan of hot pasta (Fettuccine is my favorite)! (Optional extra veggies which are yum include sliced zucchini, or baked pumpkin cubes, or chopped capsicum)
