Ingredients

  • 6 Lamb Chops

  • 2 Celery chopped

  • 2 Carrots, chopped

  • 1 Onion, chopped

  • 1/2 cup Self-raising flour

  • 4 cups Beef Stock

  • 3 tbsp Canola Oil

  • 1 tbsp tomato paste

  • Rich Gravy
  • 2 tbsp cornflour

  • 2 tbsp cold water

  • Salt and pepper, to taste

  • 1 tsp Worcestershire sauce (optional)

Directions

  • Heat oil in a large saucepan.
  • Season chops with salt and pepper and coat lightly in flour.
  • Brown chops until sealed and put in slow cooker.
  • Fry vegetables for a few minutes.
  • Stir the tomato paste into the vegetables in the saucepan.
  • Cook for 1 minute to deepen the flavour.
  • Transfer the vegetables to the slow cooker with the lamb.
  • Cover with stock and cook on low for six hours.
  • To Make The Gravy
  • Remove the lamb chops from the slow cooker and place on a plate. Cover to keep warm.
  • Pour the cooking liquid from the slow cooker into a saucepan.
  • Mix the cornflour and cold water in a small bowl until smooth.
  • Heat the liquid in the saucepan over medium heat.
  • Stir the cornflour mixture into the hot liquid.
  • Add Worcestershire sauce if using.
  • Simmer while stirring until the gravy thickens, about 2 to 3 minutes.
  • Season with salt and pepper.
  • Pour the gravy over the lamb chops before serving.

Notes
