Carrot Cake Overnight Oats

If you’ve never tried this non-cook method of making oats, then this Carrot Cake Overnight Oats recipe might be for you. It’s all the flavours you love about carrot cake, but contained in a container of oat-ey breakfast goodness. Plus, it takes 5 minutes or less to prepare, yay!

Creamy overnight oats flavored like carrot cake, with shredded carrot, spices, and a hint of sweetness for a nutritious breakfast.

Ingredients

  • 1 medium Carrot-grated finely

  • 0.66 cup Oats

  • 0.5 cup Milk-dairy or otherwise

  • 2 tbsp Honey

  • 2 tbsp Sultanas

  • 2 tbsp Cream cheese

  • 2 tbsp Greek yoghurt

  • 0.5 tsp Ground cinnamon

  • 0.25 tsp Nutmeg

  • 0.5 tsp Vanilla extract

Directions

  • Put the oats in a sealable, airtight container.
  • Add in the carrot, milk, sultanas, honey, yoghurt, cream cheese, vanilla extract and spices. Stir.
  • That’s it! Pop it in the fridge and leave it for at least 5 hours (overnight is best) so the oats can absorb all the liquid in the container.
  • When you’re ready to eat, remove the container and stir the oats. You can eat them cold or microwave for around 2-3 minutes to enjoy them warm.
