Raw Banana Cashew Oatmeal Bar

Ingredients
2 Bananas-ripe, mashed
1.5 cups Cashew
1 tablespoon Coconut oil
.75 cup Dates
.75 cup Oats
.25 cup Honey
2 tsp Chia seeds
Directions
- In a small bowl soak the chopped dates in boiling water.
- While these are absorbing, place the oats, cashews and chia seeds in a food processor. Break them up with several pulses.
- Into this add the soaked dates, the honey, the coconut oil and the bananas. Blend well. If mixture looks too wet, add more oats.
- Prepare a baking pan by lining it with baking paper, leaving an overhang so the bar is easy to remove. Press the mixture from the food processor into this pan, smoothing it with a spoon.
- Refrigerate for several hours, or until firm. Cut and serve.
