We have not just one version of Three Ingredient Fruit Cake, but two! So easy, you could whip it up in no time! This recipe just keeps getting better and better, huh? Wait till you get to taste it!

Bringing the renowned 3-Ingredient Fruit Cake, which is created using self-rising flour, iced coffee, and mixed fruit. Highly acclaimed, incredibly simple, and absolutely delicious!

Ingredients

  • Ingredient Fruit Cake Version 1
  • 600 gram Mixed dried fruit

  • 600 millilitre Chocolate Milk

  • 2 cups Flour Self-Raising

  • Ingredient Fruit Cake Version 2
  • 1000 gram Mixed fruit

  • 2 cups Fruit juice

  • 2 cups Flour Self-Raising

Directions

  • Version 1:
  • Soak the dried fruit in the milk overnight in the fridge.
  • The next day, (preheat oven to 160 degrees) fold in the self raising flour, pour into a cake or loaf tin.
  • Bake for approx one hour at 160 degrees. Fan forced ovens may need to have slightly lower temp and shorter cooking time.
  • The chocolate milk can also be substituted with:
  • Iced Coffee
  • Cold Tea
  • Cold milky coffee
  • Version 2: (By Maree Beck)
  • Preheat oven to 180 degrees.
  • Mix all ingredients together pour into lined 20cm square tin.
  • Bake for 90 minutes, turn oven off and leave in oven for 30 minutes.

Notes

  • Both versions of the Three Ingredient Fruit Cake is suitable for freezing up to 6 months

    I love this recipe! I use 1kg fruit and it also works well with either cold tea or orange juice instead of the chocolate milk – just for something different!

      How much liquid do you use with 1 kg of fruit? – I will be using orange juice.

    I am going to give this a go with the milk and will do the 1kg of fruit. – thanks for the advice zoe. would be awesome with the cold tea or orange juice- do you still use the same amount of liquid when doing the 1kg of fruit?

    I use a tin of apricot nectar and I soak the fruit over night if I plan ahead.

    This sounds so easy! I didn’t realise they were so easy. 😛
    Now, sorry for my naivety but how long do they keep for? And is there a specific way I should keep it? (In a fabric bag or airtight container….?)
    How much Rum is a good amount? I don’t want the kids getting tipsy. hehe.
