Ingredients

  • 4 Chicken breasts

  • 1 Sour cream (125 millilitre)

  • 1/4 cups Water

  • 35 gram Taco seasoning

  • 300 gram Tomato salsa

  • Tomato Salsa:

  • 1 Spanish Onion

  • 1 Ripe Avocado

  • 1 cup Cherry tomatoes

  • 1 Lemon

  • 2 Spring Onions

Directions

  • Place chicken, salsa, taco seasoning and water in the slow cooker on high for 4hrs or low for about 6-8 hours.
  • Adjust according to the size of chicken breasts.
  • How to Make the Salsa:
  • Basically, it is just putting everything in the food processor. The onions, tomatoes, the spring onions and the avocado.
  • After that, you can juice the lemon and add that in.
  • Now you are ready to serve the chicken from the slow cooker. Put it on a plate, add some sour cream and pour over the salsa on the chicken with some tomatoes to garnish.

Notes

  • Slow Cooker Creamy Salsa Chicken can be frozen for up to four months.
  • Serve with rice, some tortillas or corn chips! Yum!

    this is so yummy hubby loves it and wants it on the monthly menu, chicken was so soft i only used a fork for the whole meal. I didn’t put it in the slow cooker done in the scan pan on stove simmered for an hour and a half. Pitty no left overs for that’s how good it was. 5 star.

    Use Greek yogurt instead of sour cream to make it lower fat and still so yummo!

    This was really good. Added and extra 1/4 c water as it looked a bit dry and it turned out perfectly.

    Cooked this for the first time today. Was really nice. I cooked it in the slow cooker and the chicken was very easy to just shred. At the end I put it in the oven with some cheese on the top. I served it with sour cream and avocado and corn chips. So it was kind of like chicken nachos. Next time I think I might shred the chicken put in some tortillas and finish off in the oven with cheese. Really you could do anything Mexican with it once you cook and shred it. Kids loved it too.
