Easy Lemon Chicken

As the name suggests this is a very Easy Lemon Chicken to make; it doesn’t take long to prepare and cook and is a tasty meal.

Ingredients

  • 2 number Chicken breasts

  • number Cornflour-to coat the chicken

  • 2 tbsp Oil-to shallow-fry the chicken

  • 1 cup Chicken stock

  • 1 number Lemon (juice)

  • 0.5 tsp Dry ginger

  • 2 tbsp Honey

  • 220 gram Pineapple chunks in juice

  • number Cornflour-to thicken sauce

Directions

  • Cut chicken into bite sized pieces.
  • Toss in cornflour until evenly coated and fry in small batches until crispy.
  • To make the sauce, bring the stock, lemon juice, honey and ginger to the boil, then simmer for a couple of minutes.
  • Add the pineapple and juice of half the tin and bring back to a simmer.
  • Taste the sauce to check if its not too lemony or sweet. If it is too bitter add a little more honey to taste or if it is too sweet add a little more lemon.
  • Once you’re happy with the taste, combine some cornflour with water and add to the sauce to thicken it.
  • Put the sauce over the top of the hot chicken and serve. Serve with a simple Fried Rice.
