Ingredients

  • 1/2 Kg Beef Mince

  • 2 tbsp Taco Seasoning

  • 1 Onion diced

  • 3 tsp Garlic

  • 2 tsp Chili Powder

  • 2 Capsicum diced, any colour

  • 400 g Black Beans or about one can

  • 400 g Tomato Puree

  • 400 g Corn or about one can

  • 800 g Diced Tomato two cans or one large

  • 400 g Kidney Beans

Directions

  • Brown the mince in a large pan over medium heat. Add in the onions, garlic, capsicum and chili powder and cook for a few minutes.
  • Then add in the rest of the ingredients and stir to combine. Allow to simmer for around 20 minutes, stirring as required. If you need to, add extra water so the soup isn’t too thick. For better flavours, simmer for longer. Alternatively, pop the mixture in a slow cooker and allow to cook on low for several hours
  • Top with cheese, sour cream, yoghurt, or your choice of toppings. Serve with tortilla chips.
