Slow Cooker Beef Goulash

With Autumn now here, it’s nearly time to dust off the slowcooker (if you haven’t already) and start some hearty bubbling casseroles. Slow Cooker Beef Goulash is a hearty and heavy meal – perfect for hungry bellies!

Ingredients

  • 600 gram Chuck steak-Diced

  • 1 Onion-slice

  • 1 tsp Garlic-minced

  • 2 Potato-diced

  • 1 tbsp Paprika

  • .50 tsp Cumin

  • 2 Bay leaf

  • 2 cups Crushed Tomatoes-Tinned

  • 1 Capsicum-sliced

  • .50 cup Red wine

  • .50 cup Chicken stock

Directions

  • Place rump, onion, garlic, potato, paprika, cumin and bay leaves into a slow cooker and mix to combine.
  • Pour in the tomatoes, capsicum, wine and stock and gently mix.
  • Cover and cook on high for 4 hours, or until rump is tender.
  • Season with salt and pepper.
  • Serve topped with a dollop of sour cream.
  • Serve with crusty bread or some cheesy mashed potato and steamed vegetables.
  • Recipe Hints and Tips:
  •  Slow Cooker Beef Goulash is suitable to be cooked in bulk and frozen.  Allow to cool to room temperature, 3/4 fill a ziplock bag and freeze for up to six months.
  • To cook in the oven: Prepare as above and place ingredients into an oven proof container.  Cook with the lid on for 1.5 hours.
