Frugal Bone Broth Soup

Frugal Bone Broth Soup is a way of using Bone Broth and levelling it up into a tasty soup.  This recipe is great for those days when you feel a cold coming on, or your over-indulged on the weekend and need a refreshing light meal. Open up your fridge and slice up anything that screams “that will make me feel better”

Or when you just want something super quick to make. You could add wontons or poached shredded to make it a more substantial meal. In this dish, I like to slice my veggies with a vegetable peeler as it makes them super fine and softens quicker.

Ingredients

  • 1 -2 cups Bone Broth

  • 1/2 number Shredded Red Cabbage

  • 1 number Zucchini, thinly slice

  • 1 number Red chilli, thinly sliced

  • 1 number Coriander, chopped

  • 1 number Spring onion stalk, thinly sliced

Directions

  • Use bone broth that was previously prepared
  • Warm the bone without boiling it.
  • Add all of the raw vegetables and let them sit for a minute or so to soften.
