When you’re trying to convert a cauliflower hater into a cauliflower fanatic, these Spicy, Crispy Cauliflower Buffalo Bits are just the way to do it. Why are they called Buffalo Bits? Well it’s an American seasoning, popular on chicken wings, that is basically a spicy, tangy and buttery mix of flavours.

Sure they might taste great with chicken wings, but bring cauliflower into the mix and you have a guaranteed winner!

Ingredients

  • 1 Large Head Cauliflower-chopped into bite sized pieces

  • 0.5 cup Brown rice flour

  • 0.5 cup Water

  • 1 tsp Garlic powder

  • 0.5 tsp Salt

  • 1 tsp Butter-melted

  • 0.3 cup Sriracha-more or less to taste

Directions

  • Preheat oven to 230 degrees and prep a baking tray by lining it with baking paper and lightly greasing it.
  • In a bowl, mix together the brown rice flour, water, garlic powder and salt until well combined.
  • Toss the cauliflower into the flour mixture, making sure that each piece is well coated.
  • Pop the cauliflower onto your baking tray and bake in the preheated oven for 15 minutes, tossing the florets halfway through.
  • While this is baking, make the ‘buffalo sauce’ by mixing the sriracha sauce with the melted butter, stirring until well combined.
  • After cauliflower has baked for 15 minutes, remove from oven and toss the florets in the hot sauce mixture. Then put the cauliflower back on the baking sheet and cook for a further 25 minutes, or until florets are crispy. Allow to cool for 10-15 minutes prior to serving.

Notes

  • Because of the hot and spicy nature of this recipe, we’d recommend serving with something cooling like a yoghurt dip.
