Ingredients

  • 3 tbsp Polenta

  • 1/2 cups Plain Flour

  • 4 tsp Baking Powder

  • 1 tbsp Butter melted

  • 1 Egg

  • 1/4 cups Milk

  • 3/4 cups Corn Kernels

  • 1/2 cups Tasty Cheese grated

  • 1/2 tsp Chili Flakes

  • 1/2 tsp Sweet Paprika

Directions

  • Mix the polenta, flour, salt and baking powder in a medium bowl.
  • Add the remaining ingredients and mix until just combined.
  • Cook in a frying pan with a little oil, for about 2-3 minutes on each side until lightly browned.

Notes

  • Spicy Corn Fritters are not suitable to freeze. They are best eaten fresh on the day they are cooked.
  • Can be served hot or cold.

These Spicy Corn Fritters certainly aren’t for the faint hearted! ?They are particularly delicious served with cream cheese and smoked salmon on top… mmmm, making me hungry just thinking about it!

Of course if you don’t like spicy food, you can choose to leave out the heat and just enjoy the delicious corn flavour.? This is a great recipe to make for the kids – and it is nice and frugal!

Spicy Corn Fritters are best served hot and are not suitable for freezing. If you are storing them in the fridge – make sure you stack them in layers with a sheet of baking paper in between each layer.? Keep them in an air tight container in the fridge for up to 24 hours – but really they won’t last that long!

For an extra ‘Bang’ of flavour, add a small tin of creamed corn to your Spicy Corn Fritters – it just gives it a bit more moisture and flavour.
