Spiced Chickpeas

Vegan spiced chickpeas with fresh greens on a ceramic plate.

Wandering through a market recently and as per most markets there are loads of multicultural foods to choose from. I love trying new things and flavours.

I came across these chickpeas so I set out to create my own.

These spiced chickpeas are exploding with flavour! with mustard seeds and curry leaves try out this deliciously spicy dish.

Ingredients

  • 1 number Can Chickpeas, Drained and Rinsed

  • 1 tbsp Mustard seeds

  • 1 Brown Onion, thinly sliced

  • 10 Curry leaves

  • 1 Chilli Flakes

  • 2 tbsp Olive oil

  • Salt and pepper

  • 1 cup Baby Spinach leaves (optional)

Directions

  • In a fry pan on a medium heat and add oil
  • Stir Curry leaves and fry for one minute
  • Add the onion, mustard seeds, chilli and salt and pepper.
  • Add the chickpeas and cook them until warm.
  • Optional – add spinach at the end and stir until wilted.
