Savoury Mashed Pumpkin Slice is delicious served with a roast dinner instead of the traditional baked pumpkin. It’s also a good snack and a great way to use up leftover pumpkin mash.

Ingredients

  • 2 cups pumpkin-mashed

  • 1 cup Milk

  • 2 cups cheese-grated

  • 2 Eggs-beaten

  • 2 cups Breadcrumbs

  • 1 cup onion-finely chopped

Directions

  • Mix pumpkin, onion, milk and eggs together in a bowl.
  • Pour into a greased shallow baking dish.
  • Sprinkle with grated cheese and breadcrumbs and dot with a little butter.
  • Bake at 180 degrees for 30 to 35 minutes or until slightly browned on top.
  • Slice into squares and serve hot.

Notes

  • Savoury Mashed Pumpkin Slice is not suitable for freezing.
