Ingredients

  • 125 g Butter softened

  • 1 cup Icing Sugar

  • 3/4 cup Shredded Coconut

  • 3/4 cup Rolled Oats

  • 2 tsp Instant Coffee

  • 185 g Cooking Chocolate

  • 100 g Walnuts Or Glaced Cherries, Halved (optional)

Directions

  • Cream together butter and icing sugar.
  • Add coconut, rolled oats and coffee and mix well.
  • Roll into small balls and refrigerate for at least a couple of hours.
  • Melt chocolate and coat balls then top with a walnut or cherry.

Notes

  • For a variation, mold the mixture around a walnut or whole glace cherry before coating with chocolate
  • Recipe is suitable for freezing.  Layer between sheets of baking paper and seal in an air tight container in the freezer for up to two months.
