Cinnamon Roasted Almonds

Almonds with cinnamon coating in a white bowl, perfect for snacking.

I went to Woolworths a few weeks ago and they had a packet of Vanilla Almonds. They were the best nuts I have ever put in my mouth – totally mouthwateringly delicious! Unfortunately, they were not good for my waistline, hip pocket or skin. The Cinnamon Roasted Almonds is a homemade version and is a lot cheaper, but is guaranteed to make your thigh gap disappear like magic! A little nut with a lot of crunch.

Ingredients

  • 2 tsp Ground cinnamon

  • 0.24 tsp Salt

  • 240 gram Raw almonds

  • 1 tsp Powdered sweetener

Directions

  • Preheat the oven to 180°C.
  • In a large bowl, stir together the cinnamon, sweetener, and salt.
  • Place the almonds in a single layer on a rimmed baking tray, and bake at 180°C for 5 minutes.
  • Remove the tray from the oven, shake it back and forth to move around the almonds, and continue to bake for another 5-7 minutes, or until the almonds are lightly fragrant and toasty.
  • Immediately mist the nuts with the nonstick cooking spray.
  • Shake the tray a few times, and spray again.
  • Pour the nuts into the bowl with the cinnamon mixture, and toss until completely coated.
  • Let the nuts cool completely to room temperature before transferring to an airtight container.
