Directions
- Preheat oven to 180 degrees.
- Beat cream cheese and butter together using an electric mixer or beaters until light and fluffy 2-3 minutes. Add egg and mix well.
- Slowly add the cake mix and sprinkles and mix well each time. Once dough is made wrap in GladWrap and set aside in the fridge for about 30 minutes to firm up.
- Pour the icing sugar into a small bowl and set aside.
- Line a two baking trays with baking paper.
- Take a spoonful of mix (once firm from fridge) and roll into a ball, now roll in icing sugar and place on tray.
- Bake for 10 minutes until just starting to brown, you want them to be nice gooey so don’t over cook them.
Notes
- Cakemix Cookies are suitable for freezing for up to 1 month. Alternatively keep the cookie dough in the fridge for up to 1 week wrapped tightly in GladWrap.
- Baked Cookies will keep in an airtight container for up to 5 days.
- Change the flavour of your cookies by changing the cakemix flavour….tell me favourite combo. I’m going to try Lemon Cake mix next.
