Ingredients

  • 2 tbsp Meat Juices

  • 3 -4 cups Stock

  • 2 -3 tbsp Plain Flour

  • Salt and pepper

  • 1/2 number Fresh Herbs, Sage, Rosemary and Thyme, chopped

Directions

  • In a roasting pan, keep approximately 2 tablespoons of meat juices.
  • Add the herbs
  • Over a low heat sprinkle the flour over the meat juices and stir mixing together until it is slightly browned
  • Gradually add the stock stirring as you pour slowly as to not make lumps
  • Bring to the boil and simmer until desired consistency
