Ingredients

  • 1 cup Sugar

  • 3 Eggs

  • 1 tbsp Lemon Zest

  • 1/2 cup Lemon Juice

  • 60 g Butter

Directions

  • Combine all the ingredients in a heatproof bowl.
  • Whisk constantly over simmering water until the mixture thickens up and coats the back of a spoon. This may take up to 20 minutes, but possibly longer if not thickening.
  • Remove from the heat and pour into a sterilised jar.
  • When cool, label the lemon butter and add the date on it. Store in the fridge until required.

Notes

  • Lemon Butter is not suitable to freeze.

It may be unusual to spread lemon on your breakfast toast but I assure you that this Lemon Butter is so good that it can make your day happy!

This is a great substitute for the typical spreads because this is flavourful and healthy too! Lemons are a good source of Vitamin C, you know!

This isn’t time-consuming. You can make this in under 30 minutes!

You shouldn’t miss this yummy butter recipe! You can use this on anything, not just toast!
