Sweet, homemade jam cooked from apricots and sugar. Fruity, spreadable, and ideal on toast, scones, or in baking.

Ingredients

  • 500 gram Sugar

  • 1000 gram Apricots

  • 200 millilitre Water

Directions

  • Halve and remove the stones from the apricots.
  • Place them into a large pot and add the water.
  • Allow to boil and add sugar.
  • Allow to simmer until reduced by about half.
  • Once cooked and thickened place a small amount onto a spoon and into the fridge.
  • If this sets in a few minutes to firm enough you know you are done.
  • Place into clean recycled glass jars and leave 2cm at the top seal with the lid.
  • The hot jam will expand the hot air and then contract sealing the lid.
  • Recipe Hints and Tips:
  • Apricot Jam is not suitable to freeze.
  • Will last three months in a sealed jar.
  • This makes approximately 3 cups of jam maybe 4. Can be made in as large a batch as 3kg but any more and you will have problems getting it to set properly. Enjoy. Apricot Jam goes great in Bread and Butter Pudding – for the recipe – Click Here!

My neighbour’s apricot tree is brimming with fruit and I have been told for years to help myself. Well this year I have and the resulting Apricot Jam is delicious.
