Our American Potato Salad recipe can be served both hot and cold.

Either way it’s bloody delicious!

My personal preference is I like it hot with Fried Chicken. Just for something different!

Ingredients

  • 1000 gram Potato-waxy such as kipfler

  • 125 gram bacon-or ham

  • 0.5 cup Sour cream

  • 3 Eggs-hard boiled, cooled and peeled

  • 100 gram Cheese-cut into small cubes

  • 0.5 cup Mayonnaise

  • 2 Red onions* -finely chopped

  • 2 tsp Mustard

Directions

  • Cut the potatoes into large quarters (you can peel the skin off or leave it on) and boil in salty water for 20 minutes or until tender.
  • Drain and allow to cool.
  • Cut the quarters in half again.
  • Cook the bacon or ham in a frypan until nice and crispy.
  • Add all the ingredients into a bowl and stir very gently until well combined.
  • Serve warm or cold!

Notes

  • American Potato Salad is not suitable to freeze.
  • Best made fresh on the day it is eaten.
  • If you’re not keen on mustard, substitute with curry powder – it gives it a bit of a kick!
