Frugal Sausage Casserole is an easy “all in” recipe that provides a wonderful and complete dinner for the entire family!
I love to use the honey flavoured sausages in cooking, they just give a wonderful almost caramelised flavour, but beef or Pork sausage are just fine if you want to cut costs.
For this low-cost version, we used thin beef sausages, which are usually purchased in bulk and can be easily frozen.
For the price estimates here we’ve used a large national supermarket, but it’s possible (and highly encouraged) for you to look around at your local farmers market, local butcher or at discount grocers. You’re likely to find many of these ingredients even cheaper there!

Sorry to butt in, I just need this clarified. Are we talking uncooked as in they aren’t precooked but cold? Or precooked just not..err.. recooked / fried and hot?
Could you use a tin of crushed tomatoes instead of the soup? Trying to use up what I have in the pantry 🙂
Yes you can! Just maybe add something like extra seasonings or garlic or some tomato paste to add some flavour and make it a bit richer!
Do you think you could replace the tomato soup with tinned tomatoes? (that’s all I have in the cupboard) or would there not be enough liquid to cook the rice?
Just eaten this for tea after Miss 3 saw it on facebook and wanted it. Modified by cooking for 40 mins in the microwave then putting it into the oven for the cheese. I also added some of our pumpkin in on top of the carrots. Girls loved it, the quietest they have been at the table for a while.
This was a big winner in our house, I’d use more spuds next time though

I made this tonight after seeing it posted on your fb page. I used a tin of tomatoes, tomato sauce, BBQ sauce, half cup of water and All Season and it was absolutely delicious!
Just cooked this for my boys, very fussy 7 year old & 11 yo. They both almost inhaled it! Easy to put together, put in the oven & forget about it until the timer goes off. Thank you for an easy nutritious meal for kids!
could you make this in a slow cooker and if so for the same amount of time or different. I just don’t have an oven that’s all
could you freeze this once cooked hubby works away and i freeze meals for him
I have tried this in my slow cooker with normal sausages but tomorrow I’m going to use chicken sausages wish me luck 🙂
