Frugal Sausage Casserole is an easy “all in” recipe that provides a wonderful and complete dinner for the entire family!

I love to use the honey flavoured sausages in cooking, they just give a wonderful almost caramelised flavour, but beef or Pork sausage are just fine if you want to cut costs.

For this low-cost version, we used thin beef sausages, which are usually purchased in bulk and can be easily frozen.

For the price estimates here we’ve used a large national supermarket, but it’s possible (and highly encouraged) for you to look around at your local farmers market, local butcher or at discount grocers. You’re likely to find many of these ingredients even cheaper there!

Ingredients

  • 2 medium potatoes, thinly sliced (approx. 300 g)

  • 2 carrots, sliced (approx. 150 g)

  • 1 onion, sliced (approx. 150 g)

  • ¼ cup uncooked rice

  • 8 uncooked sausages (approx. 600 g, pork or beef)

  • 200 ml water

  • 100 g (1 cup) grated cheese (tasty cheese recommended)

  • 420 g can condensed tomato soup

Directions

  • Preheat oven to 180 °C (160 °C fan-forced).
  • Heat a large frying pan over medium heat. Brown sausages on all sides, then slice into 3–4 pieces each.
  • Lightly grease a medium casserole dish. Layer potato slices on the base, followed by carrots and onion.
  • Sprinkle uncooked rice evenly over vegetables.
  • Arrange sausage pieces on top.
  • In a jug, combine tomato soup and water, then pour evenly over the casserole.
  • Cover tightly with foil and bake for 35 minutes.
  • Remove foil, sprinkle with grated cheese, and bake for a further 10 minutes until cheese is golden and bubbly.
  • Serve hot with crusty bread or a simple green salad.

Notes

  • Swap pork sausages for chicken sausages for a lighter option.
  • Use brown rice and extend cooking time by 15 minutes if preferred.
  • Add frozen peas or corn in the last 10 minutes for extra veg.
  • Freezes well for up to 3 months; reheat in oven or microwave.
  • For a richer flavour, add a teaspoon of Worcestershire sauce to the tomato soup mixture.

        Sorry to butt in, I just need this clarified. Are we talking uncooked as in they aren’t precooked but cold? Or precooked just not..err.. recooked / fried and hot?

    Could you use a tin of crushed tomatoes instead of the soup? Trying to use up what I have in the pantry 🙂

      Yes you can! Just maybe add something like extra seasonings or garlic or some tomato paste to add some flavour and make it a bit richer!

    Do you think you could replace the tomato soup with tinned tomatoes? (that’s all I have in the cupboard) or would there not be enough liquid to cook the rice?

    Just eaten this for tea after Miss 3 saw it on facebook and wanted it. Modified by cooking for 40 mins in the microwave then putting it into the oven for the cheese. I also added some of our pumpkin in on top of the carrots. Girls loved it, the quietest they have been at the table for a while.

    I made this tonight after seeing it posted on your fb page. I used a tin of tomatoes, tomato sauce, BBQ sauce, half cup of water and All Season and it was absolutely delicious!

    Just cooked this for my boys, very fussy 7 year old & 11 yo. They both almost inhaled it! Easy to put together, put in the oven & forget about it until the timer goes off. Thank you for an easy nutritious meal for kids!
