Soft sandwich cookies filled with pink lemonade-flavored cream — tangy, sweet, and perfect for teatime or snacks.

Ingredients

  • 2 cups Self raising flour

  • 0.5 cup Custard Powder

  • 0.33 cup Pink Lemonade

  • 80 gram Butter

  • 0.75 cup Sugar

  • Pink Lemonade Icing

  • 1.5 cups Icing Sugar

  • 1 tbsp Pink Lemonade

  • 0.5 tsp Pink food colouring

Directions

  • Cream butter and icing sugar using an electric mixer until smooth.
  • Add half a cup of flour at a time, mixing well each time.
  • Add the custard powder and mix in well.
  • Add Pink lemonade mix well and combine until dough like.
  • Kneed with hands to form a soft dough then break off a teaspoon of mix and roll into a ball.
  • Place ball onto a lined baking tray and flatten with the back of a fork (this will give you a pretty pattern on the top of your biscuit).
  • Bake for 10 minutes, they should be just golden brown on the top.
  • Allow to cool then spoon 1 teaspoon of icing on the flat side of a biscuit and join another biscuit together. Dust with icing sugar.
  • Pink Lemonade Icing
  • Mix all ingredients together in a bowl until smooth using a wooden spoon.

Notes

  • Pink Lemonade YoYos are suitable for freezing for up to 1 month. Keep in an airtight container for up to 1 week.
