Ingredients

  • 1 cup Pearl barley

  • 0.5 number Capsicum-diced

  • 250 gram Cherry tomatoes-quartered

  • 6 number Shallots

  • 0.5 cup Currants

  • 1 number Orange

  • 100 gram Cheese (feta)-diced

  • 1 number Bag of seed mix -(sunflower pepitasetc, pine nuts etc)

  • 0.5 cup Parsley-chopped

  • Dressing

  • 0.5 cup Sunflower oil

  • 4 tbsp Soy sauce

  • 2 tbsp Lemon juice & lemon zest

  • 2 number Garlic cloves -crushed

Directions

  • Overnight: soak the barley in water & the currants in orange juice.
  • Boil barley for 20mins in salted water.
  • When barley is cool combine all ingredients in large bowl, gently toss until all mixed through evenly.
  • To make your dressing, place all dressing ingredients in small bowl or jug & mix well.
  • Pour over salad just prior to serving.
  • Recipe Hints and Tips:
  • Mediterranean Barley Salad is not suitable to freeze.
  • You can substitute the currents for cranberries.
