Ingredients
1 cup Pearl barley
0.5 number Capsicum-diced
250 gram Cherry tomatoes-quartered
6 number Shallots
0.5 cup Currants
1 number Orange
100 gram Cheese (feta)-diced
1 number Bag of seed mix -(sunflower pepitasetc, pine nuts etc)
0.5 cup Parsley-chopped
Dressing
0.5 cup Sunflower oil
4 tbsp Soy sauce
2 tbsp Lemon juice & lemon zest
2 number Garlic cloves -crushed
Directions
- Overnight: soak the barley in water & the currants in orange juice.
- Boil barley for 20mins in salted water.
- When barley is cool combine all ingredients in large bowl, gently toss until all mixed through evenly.
- To make your dressing, place all dressing ingredients in small bowl or jug & mix well.
- Pour over salad just prior to serving.

- Mediterranean Barley Salad is not suitable to freeze.
- You can substitute the currents for cranberries.
