Ingredients

  • 2 cups (300g) self-raising flour

  • 1 ½ cups (180g) grated cheese (e.g. tasty or cheddar)

  • 1 cup (150g) diced ham

  • 1 ¼ cups (310ml) milk

  • 1 egg

  • ¼ cup (60ml) vegetable oil

  • Salt and pepper, to taste

Directions

  • Preheat oven to 180°C (160°C fan-forced). Grease or line a 12-hole muffin tray.
  • In a large bowl, combine flour, cheese, and ham.
  • In a separate bowl, whisk together milk, egg, and oil.
  • Pour wet ingredients into dry and mix until just combined—don’t overmix.
  • Spoon mixture evenly into muffin holes.
  • Bake for 20–25 minutes or until golden and a skewer comes out clean.
  • Cool on a wire rack before serving or storing.

Notes

  • Great for freezing—wrap individually and thaw as needed.
  • Add corn kernels, chopped chives or capsicum for variation.
  • Use wholemeal self-raising flour for added fibre.
  • Perfect for school lunchboxes or afternoon tea.
  • Best eaten within 2 days if not freezing.
