How to Make Ricotta Gnocchi

Ricotta Gnocchi served with fresh ingredients for easy homemade Italian pasta.

This has to be one of the really easiest recipes for making Ricotta Gnocchi, it is so easy even the laziest cook can make it!

Ricotta Gnocchi – like all home made gnocchi – is time-consuming to make at home. But it is fun to make and it is so delicious – try it with a burnt butter sauce with a little bit of fresh garlic and top with parsley – there is nothing better!

Ingredients

  • 750 gram Ricotta Cheese

  • 1 1/2 cups Plain Flour

  • 3/4 cups Parmesan Cheese

  • 2 tsp Salt and pepper

  • 2 Egg yolk

Directions

  • Combine all ingredients, except ¾ cup of the flour, in a large bowl. Mix together by hand until it forms a ball.
  • Place dough bench top sprinkled with the extra flour and lightly knead until no longer sticky. Do not over-knead. Break it up into handful portions and roll into little sausage shapes. Cut into 1.5 cm pieces.
  • Spread onto a tray sprinkled with flour and refrigerate 20 to 30  minutes.
  • Boil a large pot of water. Cook gnocchi in boiling water and remove as soon as they start floating to the top.
