Ingredients

  • 2 number Loaves of Bread-We used multigrain

  • Fresh Mango Chicken

  • 125 gram Chicken breast-cooked and shredded

  • 2 tbsp Whole egg mayonnaise

  • 1 tbsp Aioli

  • 0.33 cup Cashews

  • 1 number Mango

  • 1 cup Rocket

  • 2 tbsp Hummus

  • Asian Duck

  • 2 number Precooked Duck legs-pulled from bone and sliced

  • 0.25 cup Red cabbage-diced

  • 2 tbsp Olive Oil

  • 1 number spanish Onion -diced

  • 0.33 cup Sweet soy sauce

  • Italian Fiesta

  • 0.5 cup Olives-pitted

  • .5 cup Artichoke hearts

  • .5 number Stuffed peppers

  • 100 gram twiggy sticks or Salami-thick sliced

Directions

  • Fresh Mango Chicken
  • Cook chicken in frypan, then finely shred or dice. You can even use a BBQ chicken.
  • Add chicken, mayonnaise, aioli and cashews in a bowl and mix well. If you have a food processor you can place chicken straight from pan, add other ingredients and pulse until combine, but not a paste. Set aside.
  • Peel and slice mango, set aside in bowl.
  • Take one slice of bread and spread with hummus add rocket and mango slices then top with another slice of bread spread chicken mix and slice of bread.
  • Trim crust and slice into thirds. Repeat until all ingredients are used.
  • Asian Duck Salad
  • Heat frypan over medium heat, add oil heat and toss cabbage until just cooked 2-3 minutes. Remove from pan, place into bowl, stir through sweet soy sauce and diced spanish onion. Heat duck in frypan after cabbage until just warm.
  • Place cabbage mix on one slice of bread. Top with another slice of bread and add duck slices, then top with slice of bread, trim crust and cut into thirds. Repeat until all ingredients are used.
  • Italian Fiesta
  • Slice olives, artichokes and stuffed peppers, gently mix together in a medium bowl. Slice twiggy’s in half or thick slice salami. Take a slice of bread and place a layer of salami on bread.
  • Top with another piece of bread and spread out a large spoon of olive mix on bread then top with final piece of bread. Trim crust and cut into thirds. Repeat until all ingredients are used.
  • Recipe Hints and Tips:
  • Ribbon Sandwiches keep refrigerated at all times or can be frozen for up to 3 months.
