These low fat orange and yoghurt cakes are scrumptious when eaten warm and low fat so you don’t have to feel guilty about enjoying them. In fact I think I will have two.

Ingredients

  • 100 gram Wholemeal Self Raising Flour

  • 150 gram Self raising flour

  • 0.5 tsp Baking powder

  • 70 gram Butter

  • 120 gram Sugar

  • 2 number Eggs -lightly beaten

  • 2 number Oranges

  • 1 cup Low fat yoghurt

Directions

  • Preheat oven to 160 degrees.
  • Combine flours and baking powder in a bowl.
  • Beat the butter and sugar using an electric mixer until creamy.
  • Puree the oranges in a food processor.Add eggs and gently combine.
  • Slowly add the orange mixture to the sugar and butter mixture then beat for 2 minutes.
  • Here is the tricky bit, add 1/3 of the flour to this mixture while mixing on low. Then add 1/2 the yoghurt while mixing on medium, next add 1/2 of the remaining flour while mixing on low again.
  • Then add the remainder of the yogurt and mix on high.
  • Add the remainder of the flour and mix on low until combined.
  • Spoon into cupcake or muffin cases.
  • Bake at 180 for 15 minutes or until lightly golden.
  • Cool on a wire rack or enjoy while still warm!
