Raspberry Mojitos | Stay At Home Mum

Sweet and tart raspberries mixed the refreshing mint, zesty lime, and a bit of white rum, it’s a fantastic drink all year around. We love it with fresh raspberries, but you’re more than welcome to use frozen ones if that’s what you have on hand.

A refreshing cocktail combining fresh raspberries, mint, lime, sugar, and rum, served over ice for a fruity, zesty drink.

Ingredients

  • For Raspberry Puree
  • .75 cup Raspberries

  • 1.25 cups Water

  • 0.66 cup Sugar

  • .25 tsp Salt

  • For Cocktail
  • .25 cup Mint leaves

  • 120 ml Rum

  • 1 Lime-sliced into wedges

  • .5 cup Ice cubes

  • 120 ml Soda water

  • 1 Mint leaves and raspberries-to garnish

Directions

  • In a small pan add the raspberries, water, sugar and salt. Cook for 3-5 minutes, stirring, until thickened. Pop in a blender and pulse until smooth. For a very smooth mix you can strain out the seeds, but we didn’t. You should end up with about 1.5-2 cups of raspberry puree.
  • Prepare 2 drinking glasses (heavy bottom is best). In them divide the mint and lime evenly. Use a muddler to smash them and release the flavours. Add the ice cubes and about 1/4 cup raspberry puree to each glass.
  • On top of this pour half of each the white rum and soda water. Stir to combine and serve straight away.
