A quick and easy meal that will definitely be a family favourite. I’ve had a lots of requests for this popular recipe! Sticky pork balls are super tasty and sweet and go perfectly with a fresh stir fry. The Soba noodles bring this dish together for a meal packed with healthy vegetable goodness. Get the kids in the kitchen to get a little messy to help roll out the pork balls!

Juicy sticky pork meatballs served with stir-fried soba noodles and vegetables for a flavorful, satisfying meal.

Ingredients

  • 500 gram Pork Mince

  • 1/4 cups Mirin

  • 1/4 cups Soy sauce

  • 1 1/2 tbsp Apple cider vinegar

  • 2 tbsp Honey

  • 4 tsp Crushed garlic

  • 3 cm number cube Ginger grated

  • 2 tbsp Sesame seeds

  • 1 tsp Cayenne pepper

  • 1 tsp Salt

  • 1 Egg

  • 1 packet Soba noodles (Cooked as per packet)

  • 1 Bunch of Broccolini

  • 1 Bunch of Asparagus

  • 1 cup Edamame beans (removed from the pod)

Directions

  • Preheat the oven to 200 degrees C.
  • Place the pork mince, garlic, ginger, sesame seeds, cayenne pepper, salt and egg in a bowl, use your hands to mix until well combined. Roll mix into balls, place into an ovenproof dish. Drizzle with a little olive oil and place in the oven for approximately 10 minutes.
  • Meanwhile in a small bowl, add the soy sauce, mirin, apple cider vinegar and honey and mix well.
  • Remove the pork from the oven and pour over sauce mixture, placing back in the oven for a further 15 – 20 minutes until it is sticky and cooked. You may need to turn the meatballs occasionally to ensure the sauce coats them well.
  • While the meatballs are cooking, cook the soba noodles as per packet, drain, rinse and set aside.
  • In a large fry pan add a drizzle of olive oil and stir fry broccolini, asparagus and edamame beans until just cooked, add in the noodles and meatballs and serve with some fresh coriander. Make sure you scoop up all of the yummy sauce from the bottom of the pan!
