Delicious served on a bed of jasmine rice and salad with a sprinkling of peanuts on top!

Ingredients
600 gram Boneless Chicken Thighs
2 Lemon grass
Caramel Sauce
1 tbsp Peanut Oil-or canola oil for allergies
2 tsp Ginger
2 Garlic Clove-crushed
.33 cup Soy Sauce
.66 cup Brown sugar
.25 cup Fish sauce
.25 cup Sherry-or Chinese Rice Wine
Directions
- Make caramel sauce by heating oil in a small saucepan over medium heat, then add ginger and garlic.
- Cook for 1 minute then add soy sauce and sugar.
- Cook, stirring, for about 3 minutes or until sugar has dissolved.
- Add the fish sauce and sherry then reduce the heat to low.
- Simmer for 5 minutes or until the sauce has thickened to a syrup consistency.
- Place the chicken in the slowcooker, add the sauce and lemongrass and mix until well coated.
- Cover and cook on low for 5 hours or until the chicken is cooked through and tender.
- Garnish with toasted peanuts and serve with a salad or steamed rice.
- Recipe Hints and Tips:
- Slowcooker Caramel Glazed Chicken is not suitable for freezing.
- For a thicker sauce, add a little cornflour.
