Slow Cooker Broccoli Cheesy Chicken

Creamy chicken and broccoli pasta in a cheese sauce, perfect for a quick family dinner.

Slow Cooker Broccoli Cheesy Chicken is one of my kids favourite meals, and probably the only way I can get them to eat Broccoli!

It does makes a truly delicious dinner that is on high rotation at my house and is so simple to make, the whole family will be asking for more!!  Best of all – it will feed a family of four for under $10!

This recipe is not only cheap, and delicious – it is freezeable too.  So make a huge batch of it and freeze some for another night!

Slow Cooker Broccoli Cheesy Chicken

Cheesy broccoli and chicken in a creamy sauce, made effortlessly in the slow cooker.

Ingredients

  • 300 g Chicken Breast Or Chicken Mince roughly chopped

  • 2 tbsp Butter melted

  • 420 g Cream Of Celery Soup tinned

  • 125 g Cream Cheese

  • 1/4 cup Milk

  • 280 g Broccoli

  • 1 tsp Salt & Pepper

Directions

  • Dry chicken with paper towels and place in sprayed slow cooker.
  • Melt butter and soften cream cheese (if not at room temp).
  • Combine melted butter, soup, cream cheese and milk in bowl and spoon over chicken.
  • Cover and cook on low for 4  hours.
  • Remove cooker lid and place frozen broccoli over chicken.
  • Cover and cook for additional 1 hour.
  • Serve over rice or pasta.

Notes

  • Slowcooker Broccoli Cheesy Chicken is suitable for freezing for up to 3 months or keep refrigerated in an airtight container for up to 2 days.

    I wanted to make this on Wednesday, but ran out of time. So, I cut the chicken into smaller pieces and browned them, then added all the ingredients into a large pan with a lid and cooked it all together (I did use a tin of creamed mushroom soup insteat of the celery soup). I had to keep stirring it so it didn’t stick to the pan, but it was so delicious. I would recommend this recipe. Mmmm.

    I too made it in a frying pan ,it turned out just as awesome, i made it the same way as Helen browning the chicken pieces first then i mixed all the ingredients in a jug and poured it over the top.Keep stirring though.It was ready in half the time and tastes great!

      I leave it as whole thigh fillets – but it’s really up to you. I did cut it up for the picture so it looked a bit nicer lol.

    Hi Shontel, you can brown the chicken first if you wish, but I find that can sometimes dry the chicken out. The 4 to 6 hours cooks the chicken perfectly so there’s no worries with throwing them into the slowcooker raw!

    Hi I am wondering when you say cream cheese are u meaning philly cheese or the cream cheese in a jar near the vegimites and other spreads.

      Hi Julie – you can use either really but I have always used the cream cheese in a jar 🙂

    I haven’t seen condensed celery soup anywhere in the supermarkets (I’m in NZ). Would other soups work ok? Mushroom? Chicken?

      Hi Alycia – you can try but sometimes when defrosting it can go a bit watery – see how you go!

    The photo of this dish looks like it has corn kernels in it, but I can’t see any in the recipe. Does it include corn?

      You can include any extra veggies you like – corn is something I just like to throw in but you can use peas, beans or anything else you prefer!

    Is there an alternative to canned soup please? Like cream with stick or something…

      Mix 1.5 cups of milk, 2 teaspoons of garlic salt and 1 tablespoon of cornflour together and use instead of soup!
