Ingredients
1 Capsicum-diced
1/2 cups Mushrooms
400 gram Chicken stock
1/3 cups Dry white wine
4 Garlic cloves-minced
3/4 tsp Salt
425 gram Artichoke hearts
1 medium Egg
2 large Egg yolk
1/3 cups Lemon juice
1/3 cups Dill
1 kg Carrots-chopped
1 kg Chicken thighs-skinless
1 kg Potatoes-peeled, chopped
Directions
- Lay carrots, potatoes, mushrooms and Capsicum over the bottom of a large slow cooker.
- Arrange chicken on top of the vegetables.
- Bring stock, wine, garlic and salt to a simmer in a saucepan.
- Pour the liquid over the chicken and vegetables.
- Cover and cook until chicken is cooked through for about 2 hours on high or 4 hours on low.
- Add Artichokes and cover and cook on high for 5 minutes.
- Whisk egg, egg yolks and lemon juice in a medium bowl.
- Take out chicken and cover to keep warm.
- Take 1/2 a cup of cooking liquid whisk into the egg mixture, until smooth.
- Add the mixture back to the liquid in the slow cooker.
- Cover and cook whisking 2 or 3 times, until slightly thicker.
- Add dill an pour the sauce over the chicken and vegetables to serve.
