Slow Cooker Greek Chicken is tender and flavorful, cooked with lemon, garlic, and herbs for a simple, Mediterranean-inspired meal.

Ingredients

  • 1 Capsicum-diced

  • 1/2 cups Mushrooms

  • 400 gram Chicken stock

  • 1/3 cups Dry white wine

  • 4 Garlic cloves-minced

  • 3/4 tsp Salt

  • 425 gram Artichoke hearts

  • 1 medium Egg

  • 2 large Egg yolk

  • 1/3 cups Lemon juice

  • 1/3 cups Dill

  • 1 kg Carrots-chopped

  • 1 kg Chicken thighs-skinless

  • 1 kg Potatoes-peeled, chopped

Directions

  • Lay carrots, potatoes, mushrooms and Capsicum over the bottom of a large slow cooker.
  • Arrange chicken on top of the vegetables.
  • Bring stock, wine, garlic and salt to a simmer in a saucepan.
  • Pour the liquid over the chicken and vegetables.
  • Cover and cook until chicken is cooked through for about 2 hours on high or 4 hours on low.
  • Add Artichokes and cover and cook on high for 5 minutes.
  • Whisk egg, egg yolks and lemon juice in a medium bowl.
  • Take out chicken and cover to keep warm.
  • Take 1/2 a cup of cooking liquid whisk into the egg mixture, until smooth.
  • Add the mixture back to the liquid in the slow cooker.
  • Cover and cook whisking 2 or 3 times, until slightly thicker.
  • Add dill an pour the sauce over the chicken and vegetables to serve.
