I can never look at Ratatouille the same after sitting through the kids movie.
Although it does give hope to my cooking that really anyone can cook.
After my kids watched the movie they asked me to cook ratatouille and loved it.

Ratatouille

Ingredients
1 eggplant, diced
1 red onion -diced
1 clove garlic -diced
1 red capsicum-seeded and diced
1 zucchini, diced
0.5 cup chicken stock
2 tomatoes, diced
1 tbsp parsley -chopped
0.5 cup basil -chopped
Directions
- dd eggplant to a lightly oiled frypan and cook over a medium heat until lightly golden.
- Add onion and garlic, then capsicum and zucchini.
- Cook for 1 minute then add chicken stock and tomatoes. Bring to the boil, then reduce heat and cook for a further 5 minutes.
- Add herbs and season to taste. Serve the ratatouille immediately.

- serve on a bed of rice or polenta
