Ingredients

  • 1 tsp Dried chili flakes

  • 1 tsp Ground Coriander

  • .75 tsp Ground cumin

  • .5 tsp Paprika

  • .25 tsp Salt

  • .25 tsp Ground white pepper

  • 4 Pork chops-120g or so

  • 1 tsp Olive oil

  • 0.33 cup Salsa

  • 2 tbsp Apricot jam

  • 2 cups Nectarines-peeled and diced

  • 2 tbsp Coriander leaves

Directions

  • In a small bowl, combine the chilli powder, ground coriander and cumin, paprika and salt and pepper. Rub on both sides of the pork chops.
  • In a non-stick pan, add the olive oil. When warm, cook the pork chops on a medium-high heat for 5-7 minutes on each side, or until juices from meat runs clear. Set aside and keep warm.
  • In the same skillet, mix the salsa and the jam. Bring this mixture to a boil, and then reduce heat and stir for a minute or two. Add in the diced nectarines and the cilantro and cook until soft, around 10-15 minutes. Serve with the pork.
