Ingredients

  • 1 Kg Rump roast

  • 2 Punnet cherry tomatoes

  • 1 bulb garlic, peeled

  • 1 Bunch Thyme

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

Directions

  • Heat oven to 180 degrees
  • In a bowl combine the tomatoes, garlic, thyme oil, add half the salt and pepper and mix well.
  • Prepare the roast by seasoning with the other half of salt and pepper, place in the roasting pan.
  • Add the tomatoes to roast in roasting pan and cook for apporxaimtely 1 hour for medium rare.
  • Let it rest for approximately 10 minutes before slicing the pouring the tomatoes and juices all over
