Mince and Noodle Stir Fry

Delicious mince and noodle stir fry with fresh vegetables, perfect for quick family dinners.

If you’ve got a packet of mince in the fridge and a couple of two-minute noodles in the pantry, congratulations — dinner is sorted.

This mince and noodle stir fry is my go-to “it’s 4:45pm and I forgot to plan anything” meal. It’s cheap, filling, endlessly adaptable, and somehow even the fussy kid eats it without complaints (well… fewer complaints).

We make this at least once a fortnight — especially at the end of the pay cycle when takeaway is absolutely not happening.

Quick, tasty, and budget-friendly, this mince and noodle stir fry is perfect for weeknight dinners. Packed with flavour and ready in minutes, it’s a fuss-free dish that keeps the family full and satisfied.

Ingredients

  • 500 gram Beef mince

  • 1 Brown onion, diced finely

  • 2 packets Instant Noodles

  • 1.5 tsp Olive oil

  • 3 tsp Crushed garlic

  • 1/2 cups Soy sauce

  • 1/2 cups Barbecue sauce

  • 1/2 Red capsicum, diced

  • 2 Spring onions (to serve)

Directions

  • Boil your kettle and place the two packets of instant noodles into a bowl (discard the flavouring sachets).  Pour over the boiling water.
  • Allow the noodles to stand for five minutes, then drain and set aside.
  • In a large frypan, heat the olive oil, then fry off the onion, crushed garlic and capsicum until cooked and fragrant.
  • Add the mince and brown well.
  • Reduce the heat and add the soy sauce and barbecue sauce.
  • Allow to cook for five to ten minutes.
  • Stir through the noodles and top with the spring onions to serve.
