Ingredients

  • 1 cup Lamb (cooked)-diced

  • 1 number punet Cherry tomatoes

  • 0.5 cup cheese (feta)-crumbed

  • 0.25 cup Olives-pitted and halved

  • 1 cup frozen Spinach-thawed and water squeezed out

  • 1 number Garlic cloves-minced

  • 1 number Egg

  • 4 number sheets puff Pastry

  • 1 number Egg-beaten to brush pastry

Directions

  • Place, lamb,tomatoes,feta, olives, spinach, garlic, and 1 egg in a bowl and stir until well mixed.
  • Cut pastry sheet into 4 triangles and place 1 heaped tablespoon of mix onto pastry and fold in half to make a triangle. Press edges together with fingers then seal together by pressing a fork into the edges to press together again.
  • Brush with egg and place on a lined baking tray. Repeat until all pastry and mix is used.
  • Bake for 20-25 minutes until golden brown.

  • Mediterranean Parcels are suitable for freezing for up to 3 months or keep refrigerated in an airtight container for 2 days.
