Canadian Maple Pork Rack

Pork rack with maple glaze and roasted potatoes, served with herbs.

This is quite a schmancy cut of pork for a special occasion. Your taste buds will thank you for the delicious flavours that will engulf them.

Ingredients

  • 1 Pork rack with 4 Cutlets

  • .25 cup Maple Syrup-for basting

  • .5 cup Tomato Sauce

  • 0.33 cup Worcestershire sauce

  • 2 tbsp Brown sugar

  • 1 tbsp Curry powder

Directions

  • Pour tomato and Worcestershire sauce, brown sugar and curry powder in a large container, mix together.
  • Sit pork in marinate leaving cracking dry, now pat skin dry with paper towel & sprinkle with salt.
  • Allow to marinate and skin dry in fridge for 2-3 hours.
  • Preheat oven to 220 degrees C.
  • Heat heavy baking dish in oven with 2 tablespoons oil, when oven has come up to temperature place pork skin side down, baste with maple syrup and cook for 6-8 minutes.
  • Then reduce oven to 180 degrees and turn over, cook for a further 35-40 minutes.
  • If wanting cracking to be a little crunchier you can cut it off & cook separately at 220 degrees C for a further 10 minutes.
  • Recipe Hints and Tips:
  • Pork Rack is not suitable for freezing and best served immediately.
