Canadian Maple Pork Rack

Ingredients
1 Pork rack with 4 Cutlets
.25 cup Maple Syrup-for basting
.5 cup Tomato Sauce
0.33 cup Worcestershire sauce
2 tbsp Brown sugar
1 tbsp Curry powder
Directions
- Pour tomato and Worcestershire sauce, brown sugar and curry powder in a large container, mix together.
- Sit pork in marinate leaving cracking dry, now pat skin dry with paper towel & sprinkle with salt.
- Allow to marinate and skin dry in fridge for 2-3 hours.
- Preheat oven to 220 degrees C.
- Heat heavy baking dish in oven with 2 tablespoons oil, when oven has come up to temperature place pork skin side down, baste with maple syrup and cook for 6-8 minutes.
- Then reduce oven to 180 degrees and turn over, cook for a further 35-40 minutes.
- If wanting cracking to be a little crunchier you can cut it off & cook separately at 220 degrees C for a further 10 minutes.
- Recipe Hints and Tips:
- Pork Rack is not suitable for freezing and best served immediately.
