Equipment

Ingredients

  • 5 cups chicken stock (or vegetable stock if preferred)

  • 1 tsp olive oil

  • 1 onion, finely diced

  • 1 celery stalk, finely diced

  • 2 tsp garlic, minced

  • 2 cups Arborio rice

  • 1/3 cup white wine

  • Zest of 1 lemon

  • Juice of 1 lemon, plus extra wedges to serve

  • 3 tbsp grated parmesan cheese

  • 1 tbsp flat-leaf parsley, finely chopped

  • 1/4 cup butter, divided

Directions

  • In a large heavy-based saucepan, heat the olive oil and 3 tablespoons of the butter over medium heat.
  • Bring the stock to a gentle simmer in a saucepan and keep warm throughout the cooking process.
  • Add the onion and celery and cook for 5–7 minutes, stirring occasionally, until softened but not coloured.
  • Add the garlic and cook for a further minute until fragrant.
  • Stir through the Arborio rice and cook for 2 minutes, stirring continuously, until the edges of the grains begin to look translucent.
  • Pour in the white wine and stir until it has been completely absorbed.
  • Add the hot stock one ladle at a time, stirring regularly and allowing each addition to be absorbed before adding the next. Continue until all the stock has been used and the rice is creamy and tender. This should take around 25–30 minutes.
  • Remove from the heat and stir through the lemon zest, lemon juice, parmesan cheese and remaining butter.
  • Allow the risotto to rest for 2 minutes before serving.
  • Sprinkle with chopped parsley and serve with extra parmesan and lemon wedges if desired.

Notes

  • Lemon Risotto is not suitable for freezing and is best eaten hot right after cooking.
  • It does tend to go gluggy if allowed to cool.
