Crispy, fiery chicken tenders marinated in sweet-chilli, coated for crunch—this 30-minute recipe delivers big flavour faster than take-out, perfect for family dinners or feeding guests.

Ingredients

  • 500 gram Chicken tenderloins

  • 1 cup Pancake mix

  • 1 cup Milk

  • 1 cup Sweet chilli sauce

  • 0.5 cup Water

  • 2 tsp Cajun seasoning

  • 1 tsp Garlic salt

  • 1 tsp Paprika

  • 1 cup Panko crumbs

Directions

  • Preheat deep fryer to 170 degrees and your oven to 140 degrees (the oven is for keeping warm and to ensure fully cooked chicken).
  • Pour sweet chilli sauce and water into medium bowl. Add chicken and soak for 10 minutes while preparing batter.
  • Pour pancake powder mix and milk into bowl and whisk together until smooth. You can make your own pancake mix if you prefer. Once made set aside.
  • Place panko crumbs, cajun seasoning, garlic salt and paprika in a bowl and toss together.
  • Remove a chicken tenderloin and dip in pancake batter then roll in crumb mix, set aside on a tray covered with baking paper. Repeat until all chicken is coated.
  • Place chicken in deep fryer 4-5 pieces at a time, cook for 5 minutes until golden brown and place in oven to keep warm and continue cooking until all chicken has been deep fried.
  • Leave chicken in oven for 5 minutes while you prepare a garden salad to have with your chicken! Recipe Hints and Tips:
  • Hot and Spicy Chicken Tenders is suitable for freezing for up to 6 months or keep in fridge for 3 days in an airtight container.
  • To add extra heat add 2 teaspoon chilli flakes to the seasoning crumb mix.
  • For less heat do not soak in sweet chilli sauce.
  • When marinating the chicken you can leave it in the sweet chilli sauce mix overnight for even hotter and tender chicken.
