You can also freeze these Grilled Gooey and Cheesy Chicken Rissoles for up to 4 months.

That is, if you can resist the temptation! In my case these doesn’t last a week no matter how many I make.

Chicken rissoles are always a hit in my house – and these grilled gooey and cheesy versions are no exception! Made with cooked chicken, plenty of cheese and a few simple seasonings, they come together in minutes and make the perfect easy weeknight meal.

Plus, they’re great for using up leftover chicken. Simply preheat your grill (or grill pan) to medium-high heat and cook the rissoles for about 15 minutes, until golden brown and crispy. Serve with a salad or your favourite sides and enjoy!

Grilled Gooey and Cheesy Chicken Rissoles | Stay At Home Mum

Chicken is a GO-TO protein for so many meals because it is versatile, lean and packed with nutrients. One of the best ways to cook chicken is to grill it.

When grilled chicken is done right, it is juicy, full of flavour and has a great char. These Grilled Gooey and Cheesy Chicken Rissoles are all of that and more!

The rissoles are made with shredded chicken, cheese, spices and a bit of flour to bind everything together. They are then grilled until the cheese is melted and gooey. You can serve these rissoles as is or with a dipping sauce.

Either way, they are sure to be scrumptious!

These Grilled Gooey and Cheesy Chicken Rissoles will melt in your mouth and ooze cheese as you slice them!

Ingredients

  • 1 Onion (finely chopped)

  • 1 tbsp Egg

  • 2 tbsp stale Breadcrumbs

  • 1 tbsp Olive oil

  • 500 g Chicken Mince

  • 10 large cubes of Cheese

Directions

  • Place minced onion, egg (beaten) and breadcrumbs in bowl and mix through with fingers until well combined.
  • Shape into 10 balls and place a cube of cheese into each rissole. Roll again to ensure cheese is in the middle. Set aside.
  • Remove the paddle or use the pan without the paddle pin.
  • Place the rissoles evenly in the MultiCuisine, close the lid, select the grill program and press on. Cook for 5-7 minutes. Make sure to turn the rissoles over once the sides turn golden brown.
  • Serve with a fresh garden salad.
