Bacon-Wrapped Chicken Legs

Delicious bacon-wrapped chicken legs with cherry tomatoes and black olives in a baking dish. Perfect.

We threw some tomatoes in with our baking chicken, for something extra, but you can cook as is and serve with salad or any other side. Yum!

Ingredients

  • 8 Chicken drumsticks-med-large

  • 8 Rashers of bacon

  • 1 Garlic clove-large

  • 1/2 tbsp Olive oil

  • 1/2 tbsp Lemon juice

Directions

  • Heat oven to 200 degrees. In a bowl whisk together the olive oil, lemon juice and minced garlic.
  • Prick the chicken legs a few times with a sharp knife and brush or spoon over the lemon juice mix.
  • Wrap each leg with one rasher of bacon, and lay in a baking tray that is either non-stick or sprayed with olive oil. Drizzle the rest of the lemon juice mix over the top.
  • Cook for 45 minutes, or until chicken is thoroughly cooked and bacon is crisping. If you like very crispy bacon, cook for an extra few minutes under a very hot grill.
  • Serve

Notes

  • For a bit of twist to the Bacon-Wrapped Chicken Legs recipe, you can swap the lemon juice for a few tbs of chicken stock and add rosemary or thyme and garlic.
