Yes, as lovely as this Gassy Lasagne recipe is, make sure your windows are open and you don’t have something special planned the next day. My Dad even says that this recipe is even nastier than my Pea and Ham Soup, and seriously, that recipe would clear a whole building.

I’m not sure what it is about my recipe that does this, but it has become a bit of a joke amongst my friends now.

This hearty lasagne combines rich beef mince, savoury tomatoes, and a creamy cheese sauce, creating a delicious and comforting meal perfect for family dinners.

Ingredients

  • 1 number Beef stock cube

  • 2 tsp Olive oil

  • 1 number Brown onion-diced finely

  • 2 number Tins crushed tomatoes

  • 1 number Tomato soup-tin

  • 1 tbsp Crushed garlic

  • 2 number Lasagna sheets-packets

  • 3 tbsp Butter

  • 3 tbsp Plain Flour

  • 3 cups Cheddar Cheese-grated

  • 2 number Chicken stock cubes

  • 500 millilitre milk

  • 1000 gram Beef mince

Directions

  • Heat a large frypan or saucepan and add olive oil.
  • Sauté the onions and garlic until fragrant.
  • Add the mince and brown it well.
  • Crumble the beef stock cube into the mince and stir thoroughly.
  • Once the meat is browned and cooked through, add the two tins of tomatoes and the tin of soup.
  • Reduce the heat to low and let it simmer and thicken for about 20 minutes.
  • Keep the lid on and set aside to cool slightly.
  • While the Bolognese sauce is cooling, prepare the cheese sauce:
  • In a microwave-safe jug or similar container, add the butter and microwave for about 30 seconds, or until bubbling.
  • Add the flour and mix well.
  • Microwave for another 20-30 seconds to ‘cook out the flour’.
  • Using a whisk, slowly add the milk, ensuring there are no lumps.
  • Crumble the chicken stock cubes into the sauce and add two cups of grated cheese.
  • Microwave in 30-second increments, whisking well in between, until the cheese is melted and the sauce is smooth.
  • To assemble the lasagne:
  • Get a large baking dish or ceramic lasagne dish.
  • Layer the Bolognese sauce, lasagne sheets (without overlapping them), and cheese sauce.
  • Continue layering until all the mixtures are used, finishing with a layer of cheese sauce.
  • Sprinkle the remaining cup of grated cheese on top.
  • Bake in the oven for 40 minutes at 180°C (350°F), or until golden and the lasagne sheets are cooked through.
  • Serve with a salad and garlic bread.

Notes

  • Use fresh lasagna sheets for quicker cooking.
  • Substitute vegetable stock for chicken stock for a different flavour.
  • Add a pinch of nutmeg to the cheese sauce for a subtle warmth.
  • Use mozzarella for a different cheese texture.
  • Store leftovers in an airtight container for up to 3 days in the fridge

    Be careful when putting in foil containers, the acid in the tomato will cause holes in the foil.
