Ingredients

  • 500 gram Chicken Mince

  • 425 gram Coconut cream

  • 0.33 cup Sweet chilli sauce

  • 0.5 cup Coriander-chopped

  • 1 tbsp Cornflour-dissolved in 2 tablespoons water

  • 3 Lebanese cucumber-sliced into rings 1 cm thick

  • 0.5 tbsp Peanut oil

  • 0.5 tsp Sesame oil -optional

Directions

  • Heat oils in frypan and add chicken mince, breaking up mince with wooden spoon as you cook it so it is like small crumbs. Cook until just brown. Set aside.
  • Pour coconut cream in large sauce pan and bring to the boil, add cornflour and stir until thickens. Reduce heat to a simmer, add chicken mince and sweet chilli sauce. Mix well and let simmer until nice and thick, approximately 5-10 mintues. Add coriander, mix and serve.
  • Serve on cucumber slices (acting like crackers) or mince mix in a bowl with cucumber slices next to it so people can help themselves.
  • Recipe Hints and Tips:
  • Coconut Chicken Bites mince mix is suitable for freezing for up to 3 months. Otherwise keep refrigerated for up 3 days.
  • Coconut Chicken Bites can be used as a dinner if you have any mince leftovers, serve on boiled rice.
