Chicken Fricassee aka Chicken Friccka’ because I can never say it properly! It is so easy, done in the microwave and moist tender chicken as the result. I hear you hesitate about the microwave but trust me it’s fab and the parsley tops it off.

Ingredients

  • 500 gram Chicken fillets-diced

  • 1 number Onion-diced

  • 1 cup Hot water

  • 1 tbsp Garlic salt

  • 1 tbsp Butter-melted

  • 0.25 cup Flour (Plain)

  • 0.5 cup Milk

  • 1 tsp Paprika

  • 2 tbsp Parsley (fresh)-chopped

Directions

  • Place chicken, hot water and diced onion in a microwave bowl and heat on high for 12 minutes.
  • Remove from microwave and place lid on, set aside.
  • In a separate bowl whisk flour, milk, paprika, melted butter until smooth.
  • Put in microwave on high for 5 minutes whisking every 30-45 seconds to keep smooth and thick.
  • Mix parsley through sauce and pour over chicken heat for another 3 minutes.
  • Serve with rice and steamed vegetables.

Notes

  • Chicken Fricassee is suitable for freezing for up to 3 months, otherwise keep refrigerated for up to 3 days.
