Beef and Vegetable Couscous

Ingredients
500 gram Beef -lean, cut into strips
2 cups Cous cous
2 cups Broccoli-chopped
1 tbsp Goats cheese
1 number Red Onion-finely diced
1 cup Cauliflower-chopped
1 cup Green beans
0.5 cup Cottage cheese-low fat
425 gram Tomato based sauce
1 bunch Basil-chopped
Directions
- To cook the Cous Cous place it in a bowl and pour over boiling water (enough to fully cover the Cous Cous) then all you have to do is cover and leave for 2-3 minutes in which time the Cous Cous will have absorbed the water. You can also use rice or Quinoa in this recipe instead of Cous Cous.
- Next add the onion, beef, sliced up beans, cauliflower and broccoli in a large oven tray and add in the tomato sauce, chopped basil and low fat cottage cheese.
- When everything is cooked and the cottage cheese blended in add the cooked cous cous and season with the salt and pepper.
